Pata negra

I couldn’t resist taking this photo of all the hanging “pata negra” or black hoof iberico hams in Bilbao this past weekend. I learned something interesting last week also. To an important extent, farms are valued by how many oak trees are on the property because high quality ham requires a diet of acorns. So the more oak trees you have, the more pata negras you can produce. Yumm Yumm!
